That process involves the removal of oxygen, which also prevents the growth of oxygen-using aerobic microorganisms such as molds, mildews, and fungi. It is similar to preserving herbs in the Culinary world, like Rosemary, Thyme, Lavender, Marjoram, Oregano, and so many more.
